French Toast Blender Waffles

These tender waffles have a slightly egg-y taste thanks to nutritional yeast, and don’t get me started on the maple syrup and cinnamon…I’ll just say ‘you’re welcome’ right now 😉

Ingredients
  

  • 1 can coconut milk
  • 1/4 cup maple syrup (or agave)
  • 1 banana
  • 1 cup oats
  • 2 Tbs ground flax
  • 2 Tbs baking powder
  • 1 Tbs nutritional yeast
  • 2 Tbs cornstarch (or arrowroot powder)
  • 2 heaping tsp ground cinnamon
  • dash sea salt
  • 1/2 cup chickpea flour *reserve for last*

Instructions
 

  • Preheat waffle maker per manufacturer instructions.
  • Add all ingredients (except chickpea flour) to blender and blend about 30 seconds on medium-high until uniform consistency.
  • Add chickpea flour 1-2 Tbs at a time and pulse to combine.
  • Allow batter to set about 5 minutes.
  • Pour directly from blender into waffle iron. I allow them to cook about 1 minute extra after the light on the waffle maker indicates they are done. 
  • Remove gently, as they will be very tender. Allow them to set up for about 5 minutes…or scarf them down! :0)
